Chocolate Mint
Tonight I gathered chocolate mint from the garden. It makes the most delicious tea. I take off the harder stems and put the leaves on an oven pan. And into the oven no higher than 120 F. I stir the leaves around with my hands once in a while. In 2 or 3 hours my mint is dried and can be put in a jar. I know there are probably better ways to dry mint and other herbs that keep more natural oils and flavor. Hanging them - well, I forget and they are dusty by the time I remember. Putting them in a paper bag is what I do for nettles and lemon balm, etc. but in the oven seems to work good enough for mint. And it's so fast. I can have chocolate mint tea tonight.
